Gluten Free Energy Bars
I’m often on the look out for a clean energy bar. You know, something you can take with you to the gym, on a hike or whenever you need a little energy boost. I was really excited to find these oat free, and gluten free energy bars which are perfect for clean eating on the go. Warning….they are REALLY addicting!
What you need:
- 1 1/4 cups of Almonds (or cashews)
- 1 1/4 cups sunflower seeds
- 2 cups shredded unsweetened coconut
- 1 cup dried cranberries (or apricots)
- 1 1/2 cups coconut oil
- 1/2 cup honey
- 1/4 cup ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Step one: Place 3/4 cups of cashews (or almonds) and 3/4 cups of sunflower seeds into a food processor and chop for 1 to 2 minutes. Remove for food processor and place in a bowl.
Step two: Place the remaining cashews (or almonds) and sunflower seeds into your food processor. Roughly chop for about 1 minute.
Step three: Mix roughly chopped nuts ,seeds, shredded coconut and dried cranberry into the bowl with the chopped nuts and seeds from step one.
Step four: Combine coconut oil, honey, ground cinnamon, vanilla extract, and salt in a sauce pan on medium heat. Cook until the mixture turns a light brown and begins to bubble. It generally takes anywhere from 3 – 5 minutes.
Step five: Pour the mixture over the nuts, seeds and fruit mixture . Mix thoroughly until the mixture has the consistency of wet sand. It usually takes about 1 minute.
Step six: Line a baking sheet with wax paper. Pour the mixture onto the wax paper in the pan. Place a second sheet of wax paper over the mixture. Using your hands press and smooth evenly through out the pan. Pack tightly so the bars wont fall apart. (should be fine these are very moist and chewy bars)
Step seven: Place in your refrigerator and let cool until the bars have hardened. (Aproximately one hour).
